Oda a Mis Huevos...Rancheros
This poem is dedicated to my huevos
Rancheros
Like the kind mom and dad used to make
The way they cut up onions and tomatoes
And how they seemed to decorate the plate
But as I got older I went a little further
And started adding some bell peppers
Cilantro and different kinds of cheeses
Sometimes cotija, sometimes cheddar
Once the onions and tomatoes are cooking
I start prepping those bad boys on the skillet
While on another pan I fry up a tortilla
I’m going to be diving in it in a minute
I’ve prepped the plate
With some refried black beans
A slice of avocado (even though I’m allergic)
And if I die, I’ll with a smile by all means
I love me some eggs
I make ‘em over easy
Cheesy
But not too greasy
And I love when the yolk explodes in my mouth
(Ooh)
I stack up all the little things I’ve added
Just the way mom and dad did
As the smell of breakfast fills up the house
