in a bit of a panic I suddenly remember she insists upon mustard with her ham; the only mustard in my cupboard being well out of date, I place a dollop of lemon curd upon the side of her plate..

You could have used the mustard and just said that the off taste is part of the mustardy flavour? :P

LOL! I absolutely LOVE mustard! ALL MUSTARDS: regular, stoned-ground, hot & spicey, and so on. When I was a carnivore my FAVORITE sandwich was cold lamb with mustard!
