DUP is closing down soon. So I thought I'd share one of my culinary creations and invite people to share recipes with each other before the site closes down.

Mackerel Hash

Ingredients:
One third of a red cabbage
Five large Brussel sprouts  
One red onion
One tin of Mackerel in olive oil
One lemon unwaxed
Sprinkle of rock salt
Three eggs - organic if possible

(optional ingredients)
Half a leek
Third of broccoli

Cooking instructions:
Chop all veg as finely as you can
Chuck into a large frying pan
Turn heat on high for one minute
Add tin of mackerel and pour all remaining olive oil onto the veg
Turn heat to medium to low
Stir oil and fish in.
leave on low heat five minutes
Squeeze lemon over everything
Raise heat to medium five minutes
Raise heat to high brown off fish and veg
Tip contents into a bowl
Leave to rest

Crack three eggs into pan you just used while oil and bits remain
Scramble eggs in the flavour from the stir fry
put scrambled eggs on top of the veg

Double portions to cook for two, etc. etc

I think this is a great Idea James! I'd love to add one of mine here, too.

Angel's Pineapple Upside Down Cake


Ingredients you'll need :

1 box of yellow cake mix
1 small package of Vanilla pudding mix
3 large eggs
1 can of pineapple rings
1 cup of pineapple juice
Maraschino Cherries
8 tablespoons of dark brown sugar
2 sticks of sweet cream butter
DIRECTIONS :
1. Mix yellow cake mix and vanilla pudding well, once done set aside and preheat conventional oven to 350 degrees farenheit
2. In a separate bowl, add 3 large eggs and 1 cup of pineapple juice and a splash of maraschino cherry juice from the jar.
3. Take 1 stick of your sweet cream butter and melt it, once melted add to the wet ingredients in the separate bowl.
4. Take your 8 tbs of brown sugar and then add the other stick of sweet cream butter, once it's melted, layer your cake pan with the brown sugar and add pineapple slices. Make sure to place the cherries in the center of the pineapple rings.
5. Once all wet ingredients are mixed well, pour them into the dry ingredients and mix until there are no bubbles left and the batter is smooth. Once done, pour cake batter over the brown sugar and pineapple mix and let bake for 36 minutes, depending on oven strength.
When a toothpick comes out clear from the middle, it's done!

Let rest for 15 minutes on the countertop, and then flip!

I'll miss DUP so much, it has been my home for over a decade.

That sounds amazing. I have never tried to bake anything. I am just sharpening up my frying pan technique atm. Thanks for sharing

One of my favorite recipes is a South/Central American one I learned on the mission field: Rice and black beans sauteed in coconut oil. Holy hell. Takes both the rice and beans to a new level.

Prepare the rice and beans as instructed then combine.
Sautee over love-medium heat in coconut oil until absorbed.

You can add any veggies or meat you want - but I prefer my veggies on the side: garlic-parmesan smashed & roasted brussels sprouts. They complement the dish in an otherworldly way.  

And weirdly, red wine ( Argentine Malbec please ) takes it to a new level.

Corned Beef Hash. Simply filling


If you don't mind eating dead corned cow
take one 12oz tin of chilled corned beef so it slices easier
sufficient sliced potatoes, peeled or not
sufficient sliced onions, peeled.
and in layers, in turn place

Potato
Corned Beef
Onion
In an oven proof dish with a lid

Pour sufficient boiling water into that dish to cover the
bottom of it and bake in a pre medium heated oven until a skewer will go through it all.
(When cooked the potatoes should've absorbed most of the water)

Remove the lid and grill till the top is brown.

This works with the microwave and hay box cooking
but will not get browned in the haybox .

Slice all the ingredients thinly and that 12oz tin and its potato and
its onion layers should easily be sufficient for four in a 1.5 QT
pyrex or similar dish.

Easy-peasy  and my mother's go to when money got tight.
