Universal Entropy

The universe tends towards entropy.
Or so they say.
After the big bang it was at its most chaotic.
Why didn't it stay that way?
How did it organise if it tends towards entropy?
We are told it was cooling molecules
And gravity exerting it's pull.

We have carbon, hydrogen, helium,
Silicon, lead, iron,
Chlorophyll, RNA, DNA.
From the void and
The choas of the Big Bang.

I'm not advocating for the invention of deities.
I'm perplexed as to how
Countless atoms became organized
If entropy is the universal lot.

There must be an explanation. I don't like being told one thing when the opposite seems obvious.
They say the universe will die because its energy will dissipate and they say energy cannot be destroyed. So where is that energy going?
They say the universe will expand into the infinite void and they say the universe revolves round a central point and all orbits decay, meaning contracting, which means the universe is expanding but contracting too.
Confusion reigns.
