Rice and Beans

I love this for one reason: rice and beans. Beans and rice.  Black beans and rice.  Black beans sauteed in coconut oil with rice is DIVINE! I have prepared it for company and they were blown away by how good a simple mean was.  

I learned that trick when in Central America, and all they had to eat was beans and rice.  So they would saute with herbs and oils whenever they had them. You're right; it takes you back to your roots and keeps you humble.

Try it! Toss a tad of coconut oil in a hot pan and throw the drained rice in then top that with the beans and stir fry a bit. It really is delish.

Ooo I made dirty rice last week. It’s my favorite.  
My dad fed me a bowl of pinto beans with jalapeño, raw onion and ketchup for lunch the other day (everyone gags over the way we eat our beans 😂). It’s humble food that reminds me of childhood.

I love beans, almost any kind except Lima
My wife was born in England, then moved to Spain and then Puerto Rico.  Then New York

We eat a lot of Latin Cuisine and I love it
Humble, delicious,  mostly healthy though there are times not so healthy, that stuff tastes the best !!

I ate way too much in jail for it to be okay yet. But I get it... beans and cornbread fed my moms 6 brothers and sister. We sugar them just a little like some would use salt. The cornbread should be dry and soak it up.
Food like this is soul and built families when they had little.
