I love Black Beans , especially with Plantain and a good Whitefish

Here, Wolfie... is my favorite recipe for                   *** PICADILLO***
                                    ...ingredients...
2 Tbs EVOO
2 med yellow or white chopped onions
3 oz Italian Sausage... hot
4 cloves minced garlic
1 1/2 lb ground beef
Kosher salt fresh-ground black pepper
4 ripe, chopped tomatos
2 tbsp Balsamic Vinegar
1 tbsp ground cinnamon
2 tsp ground cumin
2 bay leaves
pinch of ground cloves
pinch of nutmeg
2/3 cup raisins
2/3 cup capers & olives
***preparation***
1) heat OO in heavy skillet 'till simmering.... add onion, sausage and garlic... cook 'till onion soft and golden.
2) add ground beef brown and crumble, season with salt and pepper
3) add tomato, vinegar, cinnamon, bay,, clove  cumin and nutmeg... stir to combine
lower heat and simmer about 30 minutes
4) uncover pan and add raisins, capers, olives... allow to cook another 15 minutes... serve over steamed rice.

This is one I shall be making...

May substitute a good sausage for beef , but otherwise

just what I was asking for !

I hope others will take this recipe , and run with it...

It also serves very well for stuffing chiles... with a creamy sauce...

I like salads, especially in summer. Here is a nice version of white cabbage salad I just made tonight:

Half a white cabbage raw, cut in stripes and chopped up...throw it in a bowl.
Dump a handful of sunflower seeds and a handfull of pumpkin seeds in a pan and roast. Set them aside to cool down. I sometime add hemp seed too.
Meanwhile cube an avocado and add to the cabbage.
Take leafs of the moringa tree, fresh harvested and add as well as you please. You can substitute with any kind of sprout if you don't grow Moringa.
Dump the cooled down seeds in the cabbage mix.
Pour some olive oil and lime juice on top....pepper and salt as taste desires and mix it up.
Viola!

I did not know about the Moringa plant and it's health benefits !

Let alone *that* salad sounds delicious , and I only wonder if

a fresh grating of Jicama , might not add to the salad , especially

for taste and cooling effect in hot weather ( or celery )

What would you think of that ?

KIMCHI🍲

Was it when
I first read you,
pickling my way
through the
salad of your words,

and spiking
with a flick of thumb
and forefinger,
a few of the
herbs I’d found
disagreeable,
before
I’d opened myself
to these
acquired tastes
of yours.

About food or not,
your poem made me
very hungry.

Found it
in a competition
which I didn’t enter
because of this—
I’d be
picking up
enticing aromas
that I can’t abide,
unless

I walk to my
local grocer’s
that
caters to
Korean cuisine

(my first attempt at
kimchi
was a fiasco
of epic proportions).

And how will I
manage
while I stare at
octopus—
the whole place smells
of dried, raw fish
in big
open bushel barrels.

I wanted to tell you
not to
hold your breath
as I was trying to do
at that moment,
turning blue.
